Healthy SuperBowl Snacks: Mushroom Pizza Bites

Pineapple Red and Green Bell Pepper Zucchini Olives Mozzarella Cheese Canadian Bacon Mini Pepperoni Mozzarella Cheese Pizza Sauce        .  . Next assemble your pizzas.   Bake in your oven until the cheese is melted and bubbly.   The fun part about these is that everyone can choose their own toppings and your kids can help assemble their own mini pizza. We put a spoonful of sauce in the bottom of each mushroom, then cheese and toppings. Because these pizza bites use mushrooms as the ‘crust’ they are Gluten-free.   It is always nice to have healthy appetizers and snacks at a party to enjoy while also enjoying hanging out with friends and family. First step – remove the inside of your mushrooms with a spoon.   Then after you have rinsed the mushrooms,  (I wiped mine down with a damp cloth) bake at 400 for 7 minutes.


Super Bowl Snack: Chicken and Sun-Dried Tomato Pesto Mini-Pizzas

Not only will the grownups enjoy these mini-pizzas, but kids will love them too…as long as they get to help make them. I devised a recipe to give pizza some extra flare, while being inexpensive, easy to make, and most importantly, fresh. Pizza is one of the most universal foods out there but sometimes, using the same ingredients (marinara sauce, cheese, pepperoni, and crust) can be too repetitive and boring. 1 cup basil leaves. 1/3 cup sun-dried tomatoes. ½ cup extra virgin olive oil. ¼ cup parmesan cheese.
